A Healthy dish

While living in Spain a few years ago I was hooked on Fritatas
Lately I have been to a few Pot Lunch Lunches so have made a fritata
It takes no more than 15 minutes to produce this dish,
You can use frozen veg make sure you chop small if need be.
Cook your potatoes in the Microwave to save time.
This dish is the Spanish way to use up leftovers
So I am putting it here as I have been asked for it so many times now.



Ingredients
8 slightly beaten eggs plus small amount of milk
1 teaspoon mixed dried herbs
2 tablespoons olive oil
2 cooked potatoes or cold cooked chips ..... chopped
1 cup frozen whole kernel corn and peas
1 cup chopped mixed veg of your choice
1/3 cup thinly sliced green onions or a small chopped onion
1 chopped fresh tomato
1/2 cup shredded cheese
any cold meat chopped fine ( optional)
Salt pepper and seasoning
Directions
Mix eggs and milk in bowl with salt and pepper and herbs
Heat 1/2 oil in a large skillet with a lid ;
add all veg
Cook and stir for 3 minutes;
Add cooked meat heat for 1 minute( optional)
Pour egg mixture over vegetables/ meat in skillet.
Cook over medium heat with lid on.
As mixture sets, pour a tablespoon of oil over and
around the fritata,
when almost set (surface will be moist).
Sprinkle with cheese.
Also a shake of seasoning mixture i.e. Moroccan seasoning

Place the skillet under grill 4 to 5 inches from heat.
Grill 1 to 2 minutes or until top is just set and cheese is melted.
Makes 6 medium servings. Great with Salad.
or cold as a snack with onion jam or any pickle.

Yes Laurie, it one of my all time favourites. I love eggs.
