Courgette or Zucchini time


I have had 3 ways to cook zucchini sent to me in as many days,
guess there is a glut of them this year,
I have also been given or offered I don't know how many .
One of the ways to cook them I liked is as follows:

2 eggs
½ teaspoon salt
1 clove of garlic
3 cups of grated zucchini (firmly packed)
½ cup grated Parmesan cheese
½ cup self raising flour
Beat eggs, crush garlic into salt and add to eggs
Add zucchini and cheese, stir through then add enough flour for a batter consistency.
fry in hot oil turn when golden brown.

Serve with either sweet chilli sauce or capsicum jelly.

Gosh, that zucchini is making me long for summer (still a few months away). Enjoy it while you can.
